A year ago in June, I tried to make my dad's birthday cake. At first, it didn't go well. It was a total disaster:

But happily, I was able to make a decent cake after my failure:

Since then, I have been baking more, gaining experience and skills. I even made my birthday cake:

It wasn't exactly what I had in my mind, but for a first attempt at making a layered cake with filling and whipped cream frosting and toppings, I was happy!

Working with whipped cream is a bit challenging at first, but through trying, I was getting a bit better with it. I made some for this Persian love cake and I was already feeling more in control, even though it was my second time whipping cream!

I didn't do birthday cakes specifically, but I made many more cakes, pastry and sweet things from June 2020 to June 2021. So I was getting familiar with baking, its rules and my equipment. I also watched tons of baking videos and read a lot!

I was happy to see what a year of baking (only a few times per month though) could do. Can I make a cake without failing, burning things down, that also looks and tastes good? That was a good challenge to do my dad's birthday cake!

So on June 1st 2021, I started. (Yes this post is a few months late!) Knowing from previous attempts, a birthday cake needs a lot of work, especially if you have a small oven. It is better to start a few days ahead, so that both you and the cake could rest! and if something does not go as planned, you have time to redo it.

Thankfully, I didn't burn the cakes! And it didn't stick! There was no disaster this time thanks to a good cake pan and knowing my oven! It was also the first time I made a 4 layer cake so it was taller!

I didn't choose runny fillings (like in my own birthday cake) not making that mistake again! It was a good combination of caramel sauce, nuts, banana and chocolate ganache.

Then it was time for the cream! Learning that a cake needs a coating layer and you need to use the whipped cream fast, I divided the cream into 2 (one part for the coating and the other for the final frosting layer) so that I had enough time.

I'm still not that happy with the cream. it isn't as smooth on the sides. And later I think I have finally cracked the code! You should mix it again with a spoon to let the air bubbles out. We will see if that will solve this problem too!

And of course the piping decoration isn't great! The tip I could give you on that is to use cold cream and do not pipe close to the edge. It's apparently too close!

Will I make another birthday cake?

Yes! I'm starting to improve and I really wanna make a good-looking and tasty cake and do things that I have in my mind so that people can't say wether it's homemade or a professional has done it!

That's the ultimate goal!
